New menu item! "TSUMARI BURGER - Tsumari Pork and Kagura Nanban Tartar Dumpling Burger" supervised by Chef Yonezawa

Original burger supervised by Chef Fumio Yonezawa now on sale. Replacing the “TSUMARI BURGER~Special Menchikatsu of Tsumari Pork” that has been available since spring, a new menu item, “Dumpling Burger of Tsumari Pork and Kagura Nanban Tartar,” will be available from June 30. Enjoy the sticky Echigo-Tsumari pork patty and Kagura Nanban pickles in a tartar sauce and teriyaki sauce. The burger is a special menu item that cannot be found anywhere else.

In addition, handmade craft colas are now available. It is a refreshing drink with mint and lime and goes perfectly with TSUMARI BURGER. Please enjoy it together.

The burger is available for purchase and eating at the community space on the ground floor designed by Ryohin Keikaku Co., Ltd. (Take-out available)

About chef

Yonezawa Fumio

yonezawa

Born in Tokyo in 1980. He went to New York alone in 2002 after having worked in restaurants in Tokyo and appointed as the first Japanese sue-chef at Michelin -three-stared French restaurant Jean-Gerges. He worked as head chef in various restaurants after returning to Japan and took up a position of chef-de-cuisine in Jean-Georges Tokyo in 2014. He has been a head chef at THE BURN in Aoyama, Tokyo since September 2018.

Since 2015, he has been active in the Echigo-Tsumari Art Triennale and supervises recipes at the Ronald McDonald House, a facility that supports sick children. He is also a member of the “Super Daddy Association,” an organization for fathers with a “cool father figure,” and actively holds workshops, etc. From 2022, he will establish “No Code,” a joint-stock company. He is expanding his activities by participating in a variety of initiatives regardless of genre.
