We are pleased to invite you to a special dinner occasion at Echigo-Matsudai Satoyama Shokudo in September.
Wataru Shiota worked with local villagers to run a restaurant for 51 days during ETAT2018 under the supervision of a distinguished chef Fumio Yonezawa. He has returned to Echigo-Tsumari this summer, served a special dinner in August while he also help run buffet at Echigo-Matsudai Satoyama Shokudo during the daytime.

Grilled eggplant tart with wild walnuts and aioli sauce

Vegetables grown in Matsudai and Miyuki-trout with cucumber and fukinoto vinaigrette sauce

Slow-cooked roasted Tsumari pork with vegetables and basil sauce

Wataru Shiota

Shiota Wataru

Worked in a restaurant in Fukuoka since 2010. Joined Jean-Georges Tokyo in 2014 and appointed as sue che in 2016. He was the chef on site for a special restaurant opend under the supervision of Fumio Yonezawa during ETAT2018 for 51 days. Worked in different restaurants in Tokyo after the festival and returned to Echigo-Tsumari in summer 2019.
