In Akiyamago, people have long lived in harmony with nature’s bounty. Wild mountain vegetables, which sprout with the arrival of spring, are a vital part of daily life here. Given Akiyamago’s long winters, a culinary tradition has flourished in which these vegetables are salt-preserved to serve as a food source during the lean winter months. In this program, you’ll join a local wild vegetable expert to harvest mountain vegetables in the Ketto settlement, home to Katakuri no Yado.Learn from the locals how to identify and harvest wild mountain vegetables. You’ll enjoy the vegetables you’ve harvested yourself at dinner. Bursting with the vitality of the mountains, these wild vegetables are a delicacy that can only be enjoyed in spring.
